Students, faculty and staff at Portsmouth Abbey School experienced a new type of education this week when the School welcomed Korea's National Culinary Trainer, Chef Hak Joon Kim, to campus as part of the Sodexho Global Chef Exchange. The Global Chef Exchange is a month-long international chef residency that brings top Sodexho chefs from around the world to the USA, giving students a taste of authentic international cuisine and offering a unique opportunity to explore new foods and cultures and learn traditional cooking techniques.
Chef Kim, an award-winning culinary authority in Korea, created and served several meals at the Stillman Dining Hall for students, faculty and staff on October 16 and 17 and was featured at the School's 11th annual International Student Dinner on the 17th. A recognized and respected chef whose positions have included chef manager at Korea's largest theme park, Chef Kim also provided active demonstrations of meal preparations that involved the students.
While at School, Chef Kim prepared a wide variety of Korean specialties, including: Clear Noodles Stir-Fried with Beef and Vegetable; Whole Chinese Cabbage Kimchi; Pan-Fried Chicken with Soy Sauce; Korean Barbecued Seasoned Beef; and Fried Sweet Potato with Syrup. Portsmouth Abbey School is the first stop on a four-school tour through New England for Chef Kim.
Robert Cicerone, Portsmouth Abbey School's director of dining services, said, "We have been delighted to bring Chef Kim to Portsmouth Abbey for this unique experience, one that supports the learning process through the superior culinary talents of Sodexho's global executive chefs". Sodexho, dining-services provider to more than 900 college campuses throughout North America, began the Global Chef Exchange in 2003.
